"How do I change the shirt color?" Work with the black hoodie; make sure your Swatches palette is open. FOR THE FILL: Double-click the "Dark Body Fill" swatch to open the Swatch Options dialog box. Make sure the Preview box is checked, so you can see your changes on the fly. Move your sliders around until you get the color you want, and remember the numbers for the next step... FOR THE OUTLINES: Double-click the "Dark Outlines" swatch. Divide the numbers you entered for the fill color in half, and enter those values here. (I find that's usually a good starting point.) You're done.
